From the Orchard… Trust Juice

In 2016, three orchard enthusiasts joined forces to make use of the wonderful fruit produced in Gloucestershire’s traditional apple orchards. With the aim of preventing a huge amount of fruit going to waste and sustaining the ecological, environmental and cultural benefits of the orchards, the team produce delicious pure juice in support of the Gloucestershire Orchard Trust. We met with Martin and Alison of Trust Juice at Bollow Orchard on the banks of the River Severn to find out more.

 

From the Orchard… Eva’s Organic Apple Juice

 

Eva’s Organics is a family run business producing organic fruit and vegetables in the heart of Cumbria. Their apple juice is made by hand, using selected organic apples from their orchard. The apples are pressed in small batches to maintain their vibrant, natural colour with nothing unnecessary added to the final juice. We met Robert at their orchard to find out more.

Our team of talented Chefs develop our menus and prepare dishes fresh on site every day. We work with a network of local producers to bring you delicious dishes to enjoy in our Restaurant. Sarah, Pamela and Samantha from our Restaurant team recently tested some of our brand new menu including the new season lamb from our own farm served with broad beans, peas, lettuce and rosemary roast potatoes.

Our Homemade Burgers at Tebay Services

We farm nearly 1,000 acres of Cumbrian upland and our farm feeds our business in Cumbria. Beef and lamb from our farm is used to make our delicious homemade Burgers. We pride ourselves on being an old-fashioned Butchery, hanging meat on the bone for up to three weeks, offering traditional cuts and making our burgers and sausages by hand. Serving Up a Proper Burger!

Our delicious homemade Burgers are already flying out of our Kitchens this summer! Our Beef Burger comes with our own homemade burger relish, crisp little gem lettuce and tomato and our Lamb Burger is a Moroccan-spiced burger with spicy sriracha, yoghurt and cucumber dressing, crisp lettuce and red onion. Make it your own and add bacon and cheese too.

Amelia, James and Gillian from the Southbound Kitchen at Gloucester Services recently gave us their verdict on the burgers.

Amelia tried a lamb burger for the very first time “I’d usually always go for beef but the toppings on the lamb burger appealed. It has really good seasoning and sauce.” At home, Amelia’s a big fan of making her own burgers, including healthy turkey burgers.

Gillian admits she doesn’t often eat burgers but when she does, she makes sure it’s a good one! “The new brioche bun is delicious. It’s much lighter than a normal roll. It goes really well.”

All agreed that the homemade relish and spicy sriracha, yoghurt and cucumber dressing were great additions to the juicy burgers. When recommending their favourite toppings, James summed it with, “You’ve got to have the bacon and cheese too, it’s the only way!”

Our Family Farm

 

When the M6 was built through our family farm in Cumbria, our first motorway service area was born. Our farm still feeds our business and our farm heritage is important in everything we do.

We farm nearly 1,000 acres of wild Cumbrian upland. We raise our animals as they have been raised for generations. We treat them with the respect they deserve. We do not cut corners.

Our hardy flock of almost 2,000 sheep live outside throughout the year. We have a mix of Texel and North Country Mules alongside the famous local Herdwick breed.

March is a busy time on the farm as we bring our sheep in and the lambs begin to arrive.

Our Farm Manager, Bob Day, joined us as a shepherd over 30 years ago. Under Bob’s attentive eye, our lambs are born and soon venture out into the fields.

The Ruby Red Christmas Ale by Eden Brewery

Jason, of Eden Brewery, is a brewer who isn’t interested in blending in with the crowd and is always keen to try something new! Our Buyer, Alex and Jason of Eden Brewery first met via a mutual friend over some homebrew and they’ve been collaborating ever since!

Alex has collaborated with Jason on many more beers since, brewed especially for the Westmorland Family. When it came to asking him for a winter beer, we decided to go for something other than just a high alcohol, dark beer. Alex and Jason talked of all the sorts of things associated with Christmas including spices and fruit flavours which resulted in our Ruby Red Ale infused with a vibrant bouquet of cinnamon, ginger, star anise and cloves. It’s perfect for a crisp winter evening. Find it in our Farmshops now.

Our Christmas poultry is from Herb Fed Poultry in North Yorkshire. Edward Wilkinson, chartered surveyor turned farmer, left London during the credit crunch and with farming in his blood, returned to Yorkshire to develop his own business.

The turkeys are traditionally farmed, hand-fed and kept in small flocks so that they are truly free to forage for food and roam their pasture. Their unique diet includes over 10 varieties of fresh herbs, sourced from Edward’s Aunt’s local herb farm.

Our Christmas Puddings by The Original Buxton Pudding Company

The Original Buxton Pudding Company is all about reviving the county of Derbyshire’s heritage recipes, as well as enjoying a few contemporary ones too!

In 2013, a good friend of Dom and Alan, of The Buxton Pudding Company, found an old cookery book in their attic dating back to the reign of Queen Victoria. In it was a recipe for the original Buxton Pudding. With their interest in heritage recipes piqued, the company was born. Just over six years ago our Buyer, Alex, received a small sample of a sweet tart and being very partial to such things, he was impressed. This was The Original Buxton Pudding. Well, Alex had heard of Bakewell Pudding but he had never heard of this pudding! Alex knew at once that Dom and Alan were people that shared the Westmorland Family’s ideals for the way food should be made. A collaboration was the natural next step.

Alan and Dom-6291-ColourAs Alex grew up, a festive family tradition for his mother and her sister was to exchange Christmas Puddings which had been made to his Grandmother’s recipe. With their love of heritage recipes, Dom and Alan took on the challenge of re-creating a pudding that might just be as good as Alex’s Grandmother’s pudding.

Alex explains, “The recipe is my Grandmother’s from the 1930s, although this one has been made with vegetarian suet, which gives it a lighter taste. It went down so well that the practice was continued by my mother and her sister (my aunt) who used to make and then swap puddings to be eaten by each others family. As a child I remember finding a pudding in a china basin in the bottom of Mum’s wardrobe slowly maturing away. On Christmas day they would be steamed for several hours, before being brought to the table alight with brandy. Mum would make a brandy sauce which I preferred cold. In fact I often lavished it over the cold Christmas pudding for breakfast on Boxing day!”

Luckily for them, Alex approved and we’re able to share the pudding with you today! The sumptuous pudding is a combination of citrus and plump vine fruits, glace cherries, prunes and winter spices. The succulent texture comes from long, gentle steaming and the addition of generous amounts of barley wine and Thornbridge Brewery’s Jaipur Ale. This year we also have a very special Extra Mature Christmas Pudding, matured for a year and fed with Tawny Port cask finished whiskey from The Lakes Distillery, find the puddings in our Farmshops now.
